Frequently Asked Questions
1. HOW FRESH IS "FRESH"?:
In the US, "fresh" is generally accepted as the best quality in seafood. However, extreme variations in the fresh seafood supply chain challenge this theory. Some issues are:
Fluctuations in supply
- supply is typically governed by weather and migration patterns
Wide swings in price
- in times of short supply, prices can swing drastically upwards
Unstable quality
- on average, tuna boats need 1 week to reach fishing grounds, 1 to 2 weeks of fishing time, 1 week to return to port and 2 to 5 days to deliver to retail markets
The methodology employed in the Super Frozen Tuna process directly addresses these issues.
2. What is The "Eutectic" Point?
Minus 62° Celcius is the "Eutectic Point", or the point at which cell protein is preserved indefinitely and any chemical or biological activity ceases. Through the use of computer technology, we are able to maintain temperature and quality, document your product from sea to restaurant shelf, eliminate human error and guarantee quality.
