1. HOW FRESH IS "FRESH"?:
In the US, "fresh" is generally accepted as the best quality in seafood. However, extreme variations in the fresh seafood supply chain challenge this theory. Some issues are:

    - supply is typically governed by weather and migration patterns

    - in times of short supply, prices can swing drastically upwards

    - on average, tuna boats need 1 week to reach fishing grounds, 1 to 2 weeks of fishing time, 1 week to return to port and 2 to 5 days to deliver to retail markets
